Hyderabadi Biryani: A Flavorful Feast

For the Rice

  • 2 tablespoons ghee

Instructions

Cook the Rice

  • In a pot, add the soaked rice, cloves, cinnamon stick, bay leaf, salt, and water.
  • Bring to a boil, then reduce heat and simmer until the rice is cooked but still slightly firm.
  • Drain the rice and set aside.

Marinate the Meat

  • Combine the meat, onion, ginger-garlic paste, yogurt, garam masala, turmeric powder, red chili powder, and salt in a bowl.
  • Mix well and let it marinate for at least 30 minutes.

Cook the Meat

  • Heat oil in a pot. Toss the marinated meat and sear it until evenly browned on all sides.

Assemble the Biryani

  • Layer the cooked rice, marinated meat, fried onions, mint, and coriander in a large pot.
  • Pour the saffron milk over the layers.
  • Top with ghee.

Dum the Biryani

  • Seal the pot tightly with foil and then a lid.
  • Cook over low heat for 15-20 minutes.
