Homemade Italian Minestrone – A Symphony of Flavors

Minestrone soup is a classic Italian dish that is known for its hearty flavors and versatility. It can be adapted to suit various dietary needs and preferences, making it a popular choice for families and individuals alike.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 cup small pasta (ditalini or orzo)
  • 1 cup cooked white beans (canned or dried)
  • 1 cup chopped spinach
  • Salt and pepper to taste
  • Parmesan cheese, grated, for serving

Instructions

Saute Vegetables

Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and cook until softened about 5-7 minutes. Stir in garlic and cook for 1 more minute.

Add Broth and Tomatoes

Pour the crushed tomatoes, vegetable broth, bay leaf, oregano, and thyme. Bring to a boil, then reduce heat and simmer for 30 minutes.

Add Pasta and Beans

Stir in the pasta and beans. Simmer until the pasta is al dente, about 10-15 minutes.

Add Spinach

Stir in the spinach until wilted.

Season and Serve

Season with salt and pepper to taste. Serve hot, topped with grated Parmesan cheese.
